Kale- It's so amazing!

I absolutely love kale! If you haven't grown your own, you are missing out! Store bought kale is often old and tough. Fresh, homegrown kale is soo tender and delicious.

It is also a very hearty crop to grow. It handles the cold weather really well. The health benefits of kale:

  • Kale's lowers the risk of at least five different types of cancer. These types include cancer of the bladder, breast, colon, ovary, and prostate.





  • Kale is now recognized as providing comprehensive support for the body's detoxification system.




  • Researchers can now identify over 45 different flavonoids in kale. Kale's flavonoids combine both antioxidant and anti-inflammatory benefits in way that gives kale a leading dietary role with respect to avoidance of chronic inflammation.




  • One of my uses for KALE

    Green Kale Smoothie
    2 ice cubes
    1 frozen banana
    1/2 cup coconut water
    1/4 cup pineapple
    1/2 cup frozen kale (or fresh if it is summer)

    Giving

    I feel a burden on my heart this morning to give. There are so many people who need the gift of your time, and love. Actively seek to give to others. The bible says "It's better to give than receive." Truly it is!
    Take your eyes off of yourself, and what you want and look for a need you can fill for someone else. This will help you to overcome self pity and fill your heart with joy.
    Proverbs 25:21  "If your enemy is hungry, give him bread to eat; and if he is thirsty, give him water to drink."

    POMEGRANATE

     I love the winter time fruits! Pomegranate is one of my favorites! It is harvested in fall- thru January, in Mediterranean climates around the world.
    You can purchase Pomegranate seeds in little cups, already picked apart. I like to cut them open and do it myself. It can be time consuming!

    Pomegranates are very high in Calcium, Vitamin C, Vitamin K, Folic Acid, Magnesium and a variety of other vitamins and minerals.

    Ginger Candy IE: Crystallized Ginger

    This is a pic of my sliced ginger (still fresh). I'll add a picture in the next blog of the finished product.

    How to Make:

    First you will need to buy some organic, fresh ginger root. You will need at least 1 lb. Match every pound of fresh ginger with 1 lb. of sugar. I use raw sugar, or rapidura- not white.

    Wash your ginger roots well. I do not peel them. You can slice thinly, but not paper thin. Put all the sliced ginger in a big pot and cover with water.

    Simmer for 20-30 min. until the ginger is lighter and color and you have a dark tea water. Pour off the tea and save! It is super strong and delicious. Save 1/4 cup of the tea for the next step. I'll tell you what to do with the rest of the remaining tea in a subsequent blog.

    Now in your pot, you should have the sliced ginger, and 1/4 cup of the strong tea brew. Add to the pot your sugar, based upon the number of pounds of ginger you started with. (1:1)
    Turn the stove on to medium heat.
    The ginger, and sugar water will simmer for quite some time. After all the water burns off, the sugar quickly dries, and crystallizes onto the ginger pieces. You will need to keep stirring at the point when the sugar water starts to look dry.
    After the sugar crystallizes, and your ginger slices look dry, quickly remove from heat to prevent burning.
    Let your ginger candy cool on wax paper.
    When cooled, put into a glass ball jar and seal. Keep the contents dry and enjoy.
    -Use for sore throats
    -To settle the stomach
    -Aid in digestion

    Cranberry Relish Ice Cream

    This recipe is awesome! You can make it frozen and it resembles icecream or sorbet. Or make it with cranberries that are not frozen and it is a wonderful, healthy relish.

    **Cranberries are packed with Vitamin C and fiber. This is a perfect food for combating or preventing urinary tract infections. Cranberries also contain bioflavonoids that improve eyesight and help prevent cancer.

    Ingredients:
    1 Bag of cranberries (around 1 lb.) FREEZE FOR ICE CREAM/SORBET
    1 Orange
    1 T. Orange peel rind
    1 Apple
    3/4 cup of raw sugar, or honey
    1 T. Lemon juice

    Get out your food processor, and put in the cranberries, and sugar. Process until cranberries break-up. Then add your orange and orange rind, apple with skin, and lemon juice. Process a few more minutes until you like the consistency. I keep mine a little bit chunky.

    Scoop into a bowl and serve immediately if using as ice cream. It's a tasty, tangy treat. If using as relish. You can chill it in the refrigerator until ready to use.

    Kumquats-Mmmm!
    I love the fruits available this time of year- besides Pomegrantes, Kumquats are my favorite! They are packed with Vitamins A and C and fiber. The flesh is sweet, and the juice is tangy. They are so delicious. I eat the entire fruit, including the seeds.

    Kumquats are the smallest citrus fruit, and originate from China.

    Garlic Breath

    Did you eat your garlic today? Fresh garlic everyday, helps to boost the immune system. Dice up 5-6 cloves daily and keep in a small dish. Add it (uncooked) and sprinkled on top of your meals. You can even use it at breakfast! I don't recommend garlic on pancakes though. :)
